Essential Commercial Kitchen Maintenance

Ignoring the maintenance of your restaurant exhaust fan, exhaust hood and any kitchen exhaust vent cannot only lead to danger of a devastating fire but could be very costly in terms of loss of trade should any of the equipment fail, due to lack of periodical maintenance.

The cost of a new exhaust system is on a par with the cost of a new mid range car.  To run efficiently, a car must be serviced regularly, so it makes sense to maintain the servicing of a kitchen exhaust and supply system.

Are the carbon dioxide (CO2) levels in your kitchens breaking the law?

British Standard 6173 is relevant to commercial catering installations and is not intended to apply to domestic dwellings including bed & breakfast installations, for which British Standard 6172 and 5440-2 normally apply. However, some premises may border on commercial activities due to their high cooking loads and this needs to be taken into consideration when deciding on the most appropriate British Standards to apply.

Are your Ventilation Systems performing efficiently?

Ventilation Systems should be checked at least annually to determine that the ductwork is clean and does not leak, that the fans are working correctly and are in good condition, the filters are serviceable and that fire and smoke dampers are set correctly and are functioning well.

Depending on local air quality, filters can become blocked quite quickly which causes fans to consume more power and reduce their service life considerably, as well as increasing running costs.
